Summer is in full swing! As you are enjoying the seasonal sun, you might find yourself getting a little too warm and looking for a way to cool off. Instead of reaching for a boring glass of water, why not grab a delicious and healthy fruit popsicle instead? Beat the heat and get a serving of fruit with this refreshing recipe for strawberry and mango popsicles.

  • 10 wooden popsicle sticks
  • 1 cup of strawberries, thinly sliced
  • 1 peeled, pitted, and diced mango
  • 1 tablespoon of sugar
  • 1 2/3 cups of mango nectar

Soak your popsicle sticks in warm water.

In each mold of a ten-popsicle mold, insert a few strawberries. Turn them at different angles so they do not all sink to the bottom of the mold.

In a food processor, combine the mango and sugar until smooth. With the processor still running, slowly pour in the mango nectar.

Pour this mango mixture over the strawberries in each mold. Give each mold a few pokes with a skewer to get rid of any air bubbles and make sure the berries are evenly distributed. Add one popsicle stick in the middle of each and freeze until solid (for about 8 hours).
